WHere is a home-style version of a beverage featured on the seasonal cocktail list. Designed as a large-volume premix that is bursting with the essence associated with Christmas time, which makes it ideal for a celebration. Reserve the remaining syrup you can use for brunch beverages, desserts, or to make more rounds of this cocktail.

Makes enough for 10 servings
To make the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
To make the Cocktail (makes 850ml, serving 10)
400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Method
Making the Cordial: Combine all the items into a pot, heat until it reaches a simmer, mixing to dissolve. Then, take off the heat allowing it to cool down fully. Decant into a sterilised bottle, cap it and store chilled, it can be stored for up to four weeks.
For the Premix: Mix every spirits and syrup into one large bottle, leave to sit for an hour, then strain preferably using a fine cloth, so it's perfectly clear.
For serving: Pour 85ml of the cocktail base to a cocktail shaker containing ice, gently stirring gently for about 60 seconds until cold. Strain into a cold coupe glass or equivalent, garnish with some cranberries adding the final touch using a brief mist of mandarin oil over the drink.
